Satay coconut veggie curry

Ingredients: -1 red onion -2 small cloves of garlic  -2-3 Tb of natural peanut butter -2-3 Tb of organic tamari sauce -1 tin of organic tinned coconut milk -1-2 pinches of dried chilli flakes -1 whole broccoli chopped up  -Mixed frozen organic veggies (cauliflower, carrot, green beans) -Cauliflower rice (see our Poke bowl recipe for details) -Pinch of turmeric to add to cauli rice -Toppings: whole peanuts, fresh coriander, chilli flakes, sesame seeds -Optional additions: tofu, tempeh or protein of your choice 

Method: 1) Sautee the onion and garlic in a pot until lightly cooked  2) Add coconut cream and bring to a simmer 3) Add the tamari, peanut butter and chilli flakes and let the flavours develop for at least 10 minutes  4) Add all the raw/frozen veggies to the sauce and leave for another 10 minutes to allow the veggies to cook 5) Serve with turmeric cauliflower rice and sliced red cabbage 6) Top with coriander, chilli flakes, peanuts and sesame seeds Enjoy!
