We are huge fans of oats but sadly they don't quite agree with us, especially when we eat them too much! So we have no choice but to find an alternative to satisfy our porridge cravings in the colder months. Here it is...
Servings: approx 2
Ingredients: -2/3 cup of tricolour quinoa (the red and black quinoa have more polyphenols than just the regular white one so choose these when you can) -2/3 cup coconut milk (plus extra for serving) -2/3 cup filtered water -1 tsp cinnamon -1 tsp honey or rice malt syrup -Toppings: chopped dates, blueberries, walnuts (really you can put anything you like on this)
Method: 1) Rinse the quinoa in water and then strain off the water 2) Combine the liquids in a pot and add the quinoa 3) Allow it to simmer with the lid on for about 10 minutes 4) Remove the lid and allow any excess liquid to cook off 5) Add cinnamon (or cacao to make it chocolate flavour) and the honey/rice malt syrup (or whatever sweetener you'd like) 6) Serve in bowls and top with your toppings and extra coconut milk Enjoy!
