Plant-based Cauliflower Pizza

Cauliflower base:

1/2 medium head of cauliflower (we find that each quarter is more than enough for one person)

2 1/2 tbsp chia seeds

1/8 cup water

1/3 cup almond flour

1/2 tsp salt

1) Mix the chia seeds and water together and let it form a gel for at least 15 mins

2) Blitz the cauliflower finely in a food processor or Thermomix

3) Use cheese cloth or something similar to drain the excess moisture out of the cauliflower (not always necessary)

4) Add chia mixture and all other ingredients and mix well (add more water or flour if necessary so that it’s able to form a ball)

5) Roll into a pizza base using hands or a roller to desired thickness (if it’s too thick it won’t cook well and will be less crispy)

6) Bake at 180 degrees for 15-20 mins

7) Carefully flip the base using another tray and baking paper

8) Bake again for another 15-20 mins

9) Add desired toppings and then bake again for 15-20 mins or until it is cooked to your liking

10) Season with salt and pepper

11) Top with fresh ingredients like avo and fresh herbs

- Organic tomato paste, savoury yeast flakes, mushrooms, red onion, olives, avocado and coriander but of course you can use whatever toppings you like :)
