Ingredients
1 Cup coconut sugar
1/2 Cup GF Flour
1/2 Cup almond meal
2 teaspoons spoons Baking Powder
Salt
4 Tbs spoons cocao
1/2 Cup coconut oil melted (I use the Coco Earth liquid coconut oil)
1/2 Cup Boiling Water
100 grams of melted chocolate (light or dark)
4 eggs separated
1tsp vanilla essence
Method
Beat egg whites with one tablespoon of baking powder until they reach stiff peaks.
Beat egg yolks, coconut sugar and vanilla until creamy yellow.
Sift dry ingredients into egg yolk mixture and mix slowly.
Add oil and boiling water, and melted chocolate beat until smooth.
Fold egg whites into mixture until the mixture is even in consistency.
Bake on 170C for 30 minutes (if its cup cakes then it will only take about 15-20 minutes).
Note: This recipe makes 12 cupcakes or one 3-4cm high cake. Make a double batch if you want a tall cake.
