1 grapefruit/ orange/ blood orange
1/2 fennel bulb
2-3 handfuls of rocket or salad mix
1/2 red onion
1/4 cup walnuts or almonds
1/4 cup fresh basil leaves
1 tsp balsamic vinegar
1 tbsp olive oil
Optional goats cheese or feta
Scatter salad leaves into a bowl or serving platter. Finely slice red onion and fennel. Segment citrus, I place a bowl under the citrus so it catches and juices for the dressing. Squeeze leftover juice from citrus into the bowl. Toast nuts Spread ingredients over salad leaves. Mix dressing of balsamic, olive oil, citrus juice squeezed, salt and pepper.
