Ingredients
3 eggs
1 cup almond meal
1/2 cup coconut flour
1/2 cup gf flour
2t cinnamon
1t vanilla
1t nutmeg
1/2t salt
2.5 cups grated carrot
1.5t baking powder
1/3t bicarbonate
3/4 cup oil (half coconut half olive oil)
1 cup coconut sugar
1/2 cup raisins
1/2 cup walnuts
Method
- Beat eggs and sugar until light and fluffy. - Slowly drizzle oil into egg mixture and beat until smooth. - Add vanilla essence - Sift dry ingredients into the bowl and gently mix in until combined. - Fold in walnuts and raisins
- Bane at 170 degrees Celsius for 30 minutes or until a toothpick comes out clean.
