Warming Chickpea Curry

Ingredients Curry: -1 tin organic chickpeas -1 tin organic diced tomatoes -1/2 tin organic coconut milk  -1 red onion chopped  -1-2 cloves of garlic finely chopped  -2 Tb extra virgin olive oil  -1 tsp turmeric powder -1 tsp coriander powder -1 tsp cumin powder -1/4 tsp chilli flakes -1/4 tsp ginger powder -Salt to taste  -Fresh coriander to garnish 

Cauliflower rice: -1/2 cauliflower  -1 tsp turmeric powder  -1 Tb Extra virgin olive oil  -Salt to taste 

Method 1) Sautee the red onion and garlic in a pot with olive oil 2) Add the spices and mix  3) Add the tomatoes and coconut milk and bring to a simmer to allow the flavours to develop and the sauce to thicken 4) Add the chickpeas into the sauce and allow to cook gently whilst making the cauliflower rice

5) To make the rice: blitz the cauliflower in a food processor until it becomes your desired size but be careful to not over do it 6) Lightly coat a pan with olive oil and cook the cauliflower over medium heat for 5-10 minutes 7) Add the turmeric, salt and more olive oil if desired and mix them in well 8) Serve the cauliflower rice with the curry in a bowl and garnish with fresh coriander  9) Enjoy
