100g of cooked pumpkin (we had leftover roast pumpkin in the fridge but steamed works well too)
1 Tbs almond meal
1Tbs coconut flour
1 Tbs tapioca flour or gf flour alternative
1 Tsp baking powder
1-2 Tbs almond or coconut milk
Mash pumpkin with a fork
Mix egg into mashed pumpkin
Add dry ingredients and mix
Add coconut or almond milk until the texture is thick but soft
Heat frying pan and keep on a medium to low temperature.
Add a tablespoon of butter or coconut oil to the pan.
Spoon into 3 portions and spread to desired thickness.
Allow them to cook gentle for 2-3 minutes before flipping.
Serve with avo, hummus, goats cheese or whatever you feel like!
