Paleo Pumpkin Pancakes

Ingredients

100g of cooked pumpkin (we had leftover roast pumpkin in the fridge but steamed works well too)

1 Tbs almond meal

1Tbs coconut flour

1 Tbs tapioca flour or gf flour alternative

1 egg

1 Tsp baking powder

1-2 Tbs almond or coconut milk


Method

  • Mash pumpkin with a fork

  • Mix egg into mashed pumpkin

  • Add dry ingredients and mix

  • Add coconut or almond milk until the texture is thick but soft

  • Heat frying pan and keep on a medium to low temperature.

  • Add a tablespoon of butter or coconut oil to the pan.

  • Spoon into 3 portions and spread to desired thickness.

  • Allow them to cook gentle for 2-3 minutes before flipping.

  • Serve with avo, hummus, goats cheese or whatever you feel like!
