Sweet Potato Brownies

Ingredients

- 100g organic grass fed butter

- 150g cooked sweet potato

- 3/4 cup gluten free flour

- 1 cup almond meal

- 1 cup coconut sugar

- 3 Tbs cacao

- 2 eggs

- 1 tsp baking powder

- 1 tsp vanilla extract

- 100g dark chocolate

- a pinch of salt

- Optional 100g chocolate chips or nuts

Method

- Boil or steam a peeled sweet potato and then plead it into a pure.
 
- In a bowl mix melted butter, sugar, eggs and sweet potato.
 
- Mix in melted chocolate.
 
- Add dry ingredients and mix.

- Add nuts or chocolate chips.
 
- Line a 20cm square tin with butter or coconut oil and smooth mixture in.
 
- Bake at 180 degrees Celsius for 25-35 minutes or until you can poke a toothpick in and no batter sticks.
