Healthy Waldorf Salad

Ingredients: 
 

- Roasted beetroot
 
- Rocket
 
- Sprouts 
 
- Walnuts
 
- Radish
 
- A green apple  
 
- Onion 
 
- Apple cider vinegar
 

Method: 
 
- Slice onion and radish finely, soak in apple cider vinegar and salt to lightly pickle. 
 
- Toast walnuts in a pan with some honey or a splash of olive oil. 
 
- Slice apple into thin batons. 
 
- In a large bowl combine all ingredients and lightly toss. 
 
- Serve with olive oil or vegan mayo dressing. 
 
- Season with salt and pepper
