Banana Protein Pancakes

Serves: 1-2
 

Ingredients:
 
2 organic eggs
 
1 small banana 
 
1 tsp almond meal
 
1 small pinch of baking powder
 
1 tsp psyllium husks
 
1 tsp protein powder (we used Amazonia Raw Paleo protein) 
 
1 dash of vanilla essence (natural)
 
Toppings: 90% Lindt chocolate (extremely low in sugar and dairy-free), peanut butter and frozen raspberries (but really you could use anything!)
 

Method:
 
1-In a NutriBullet blend all ingredients until nice and smoothie 
 
2-In a medium heat pan, line the pan with coconut oil and spoon the pancake mixture in desired pancake sizes
 
3- Once they begin to bubble on the top, flip them and cook the other side (they cook quite quickly so use your own judgement) 
 
4- Stack the pancakes and top with your desired toppings
 
5- Enjoy!
